Nutty energy bites - Recipe for nursing moms and nutrition tips

Nursing moms should prioritize nutrient-dense foods, including fiber and protein for satiety, blood sugar control, and weight management, as well as healthy fats and antioxidants for heart health and brain health. But remember that nursing moms are also busy moms, so meals and snacks that are easy to prep and portable enough to pop into a diaper bag are a welcome treat!
Nutty energy bites check all the boxes while also being absolutely delicious! Nursing babies will thrive, and nursing moms—along with spouses and older siblings—will all enjoy this yummy blend of old-fashioned oats, peanut butter, dark chocolate, heart-healthy seeds, cinnamon, and a touch of honey and salt.
Ingredients:
- 1/2 cup almond flour
- 1/2 cup old-fashioned oats
- 2 cups peanut butter
- 1 1/2 bars 70% dark chocolate, crumbled or finely chopped
- 1/4 cup ground hemp seeds
- 1/4 cup ground flax seeds
- 2 Tbsp chia seeds
- 1 1/2 tsp vanilla
- 2 tsp honey
- 1 tsp ground cinnamon
- 1/2 tsp salt, plus more to taste
- 1/2 cup unsweetened shredded organic coconut flakes
Steps:
Combine all the ingredients with the exception of the coconut flakes. Form into 1-2” balls and place on a sheet pan in the refrigerator harden. Remove after 30 minutes and roll in coconut flakes. Store in an airtight container in the refrigerator or freeze.
