Receta: Ensalada de Quina and Brocoli (Recipe: Quinoa and Broccoli Salad)

Que Tal Soy Brenda Macias,

Gustaría recordarles lo importante de elegir alimentos más saludables. Frutas, verduras y legumbres, me ayudan no sólo a bajar la inflamación y a nutrir mi cuerpo para fortalecer mis huesos, sino también está comprobado que te levantan el ánimo. Les quiero compartir dos de mis recetas favoritas de ensalada acompañada con un aderezo casero delicioso.

Ensalada de quinoa y brocoli

Ingredientes:

  • Espinacas
  • Col rizada
  • Brocoli
  • Quinoa blanca
  • Frijoles rojos
  • Garbanzos
  • Elote (maiz) amarillo
  • Tomates Cherry

Instrucciones:

  1. Debemos lavar muy bien toda la verdura antes de preparar nuestra ensalada.
  2. Además, enjuaga los frijoles rojos, garbanzos y elote.
  3. Ahora que están los ingredientes bien lavados, escurridos y secos, vamos a picar todas las verduras. ¡Me encanta que la verdura este finamente picada!
  4. Finalmente, elije un bol profundo o una ensaladera y vamos a revolver todos los ingredientes, junto a tu aderezo de ensalada.

Aderezo de vinegreta de limon

Ingredientes:

  • Aceite de oliva o de aguacate
  • Vinagre de sidra de manzana
  • Jarabe de arce orgánico
  • Mostaza de Dijon
  • Ajo
  • Jugo de limón
  • Sal y pimienta

Instrucciones:

Vamos a licuar o mezclar todos los ingredientes. ¡Y disfruta!

Ensalada de espinacas y edamame

Ingredientes:

  • Espinacas
  • Quinua blanca
  • Edamame
  • Semillas de girasol
  • Pollo orgánico (opcional)
  • Aguacate (opcional)

Agregar aderezo de vinagreta de limón.

I would like to remind you how important it is to choose healthier foods. Fruits, vegetables, and legumes help me not only reduce inflammation and nourish my body to strengthen my bones, but they are also proven to lift your spirits. I want to share two of my favorite salad recipes accompanied by a delicious homemade dressing.

Quinoa and broccoli salad

Ingredients:

  • Baby Greens or spinach
  • Kale
  • Broccoli
  • White quinoa
  • Kidney beans (red beans)
  • Garbanzos (chickpeas)
  • Yellow corn
  • Cherry tomatoes

Instructions:

  1. We must wash all the vegetables very well before preparing our salad.
  2. Also, rinse the red beans, chickpeas and corn.
  3. Now that the ingredients are well washed, drained, and dried, we are going to chop all the vegetables. I love it when the vegetables are finely chopped!
  4. Finally, choose a deep bowl or salad bowl and stir all the ingredients together, along with your salad dressing.

Lemon vinaigrette salad dressing

Ingredients:

  • Olive oil or avocado oil
  • Apple cider vinegar
  • Organic maple syrup
  • Dijon mustard
  • Garlic
  • Lemon juice
  • Salt & Pepper

Instructions:

Blend or mix all the ingredients. And enjoy!

  • Edamame
  • Sunflower seeds
  • Organic Chicken (optional)
  • Avocado (optional)
